Development and Characterization of Arrowroot Starch Films Incorporated with Grape Pomace Extract

Grape processing residues are a good source of bioactive and nutritional compounds. The incorporation grape pomace extract (GPE) in starch films can be strategy for the elaboration new food packaging products applications such as edible or fruit strips. In this context, objective research was to analyze effect variation concentration GPE (0, 20, 30, 40% mass/mass solids) on physical chemical properties arrowroot created by casting. characterized moisture content, pH, total titratable acidity, soluble solids, anthocyanin content.
